These FLAXSEED Muffins are beyond good and good for you!!
With tons of fiber and other great vitamins and minerals, you can adjust them to be more savory or sweet. I batch these almost weekly. I never feel bad about my family eating them any time of the day.
Makes about 12-14 standard size muffins
2 cups flaxseed, ground
1 Tbsp baking powder
pinch of salt (optional)
5 eggs (room temp)
1/3 cup coconut oil, melted
1/3 cup liquid sweetener of choice (I used pure maple syrup)
1/3 cup water (room temp is fine)
Preheat oven to 350 degrees. Whisk dry ingredients together. In a separate bowl, whisk eggs and other liquid ingredients. Mix wet with dry and then pour in muffin tins (I highly suggest investing in silicone muffin molds-not need to mess with liners and greasing)
Bake for 20-25 mins until tops are firm but still have give. I will often drop 3-5 frozen blueberries on top of each to make them Blueberry Flax Muffins :)
