I’m not a trained chef. In fact, I never really enjoyed cooking until it became a necessity for me after my daughter's diagnosis.
Being determined, it took me hundreds of hours in the kitchen, on Pinterest, reading cookbooks...and I have a long list of epic fails to prove it! But as I peeled back the onion on nutrition, dealing with picky eaters and learning how to infuse flavor into dishes with simple and whole ingredients, it all started to make sense.
Years later, I have a family of 5 that actually LOVE the dishes I make. I have a totally new appreciation and passion for cooking and for the food that we put on our plates.
I believe in the power of a heavy plant based lifestyle, however, I also believe that there is no "one-size fits all" journey to optimal health. I take a much more flexible and open-minded approach for my family and yours.
This challenge isn't about converting you to 100% plant based, but instead to show you how easy, delicious and life changing eating a more plant based diet can be.
