Celiac Disease & Gluten Sensitivities

In January of 2013, we rushed my daughter to the ER after finding out she tested positive for Type 1 Juvenile Diabetes. 


Overwhelmed, Scared, Stressed, Sad... I checked alllll the boxes. 


After a week in the hospital, when it was time to cut us loose, they had just one more parting gift for us.  


“…Her labs came back positive for the Auto-Immune Disease, Celiac.” 

Just as I was barely getting a grip on the “Diabetes” thing, we got hit with the “Celiac” train and it was almost more than I could handle.


I think my mind went numb for 24 hours.  I was going through the motions but not really there.  


Of course time doesn’t stand still when you have a 3 year-old that is depending on you to take care of her. 

I did my best to fake the funk but I was LOST!


I started reading, cooking, researching, cooking some more and I never looked back. 


I started to take nutrition seriously.  I knew that what we ate had a direct affect on our health (both internally and externally).  After years of my own trial and error, I decided to get my certification in Holistic Nutrition. 

As a result of embracing our new "normal" lifestyle, I have not only healed my daughter from the damage of Celiac disease, but I have healed myself as well!  

For decades I suffered from symptoms that no doctor could explain.  Things like excessive bloating, gas, cramps, constipation, headaches, constant fatigue, etc.  Girl... it. was. bad.


I just assumed this was something most people lived with.

The more I learned about health and nutrition the more frustrated I got with the lack of education that we, as parents, are given.

I spent hundreds of hours on allll the sites that shared "well intentioned" recipes and tips but in the end I was left more confused and overwhelmed then when I started.  

I knew there had to be a better way to compile all the information, we as Mothers, needed to really make some serious changes in our lives and that of our family's.

Changes that were simple, realistic and fast!  After all, when you have kids, it feels like you lose hours from your day.

I have taken all my knowledge, expertise and experience and now want to share it with other Moms who are right where I was.  Just keeping their head above water.  Seeking change but not knowing where to start.
